- 2 large flour tortillas
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend of your choice)
- 1/2 cup cooked chicken, beef, or vegetables (optional)
- 1/4 cup diced onions (optional)
- 1/4 cup diced bell peppers (optional)
- 1/4 cup diced tomatoes (optional)
- 1/4 cup chopped fresh cilantro (optional)
- 1/4 cup sour cream (for serving)
- 1/4 cup salsa (for serving)
- Cooking oil or cooking spray
Recipe Instructions: If you're using meat or vegetables, make sure they are cooked and ready. You can use leftovers or cook them fresh in a pan with a bit of oil and your favorite seasoning. Heat a non-stick skillet or griddle over medium heat. You can add a small amount of oil or use cooking spray to prevent sticking. Place one tortilla in the hot skillet and let it warm for about 30 seconds. Sprinkle half of the shredded cheese evenly over the tortilla. If you're adding other ingredients, like cooked meat or vegetables, diced onions, bell peppers, tomatoes, or cilantro, scatter them evenly over the cheese. Top with the second tortilla, pressing down gently. Cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Carefully flip the quesadilla using a spatula. You can add a little more oil or cooking spray to the pan if needed. When both sides are golden brown and the cheese is completely melted, remove the quesadilla from the skillet. Let it cool for a minute, then use a sharp knife or a pizza cutter to slice it into wedges. Serve your quesadilla with sour cream and salsa on the side for dipping. You can also garnish with additional cilantro if desired.
