- 2 cups red or green salsa (store-bought or homemade)
- 1 cup cooked and shredded chicken (optional)
- 1/2 cup diced onions
- 1/2 cup crumbled queso fresco or shredded Monterey Jack cheese
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
- 2 tablespoons vegetable oil
- Salt to taste
- Optional toppings: sliced avocado, sliced radishes, pickled jalapeños, and fried or poached eggs
Recipe Instructions: Prepare the Tortilla Chips: Cut the corn tortillas into wedges or strips. Heat the vegetable oil in a large skillet over medium-high heat. Fry the tortilla pieces in batches until they are crispy and lightly browned. Remove and drain them on paper towels. Sprinkle with a pinch of salt. Sauce the Chilaquiles: In the same skillet, add the diced onions and sauté them until they become translucent. If you're using shredded chicken, add it to the skillet and sauté for a few minutes to heat it through. Pour the red or green salsa over the onions and chicken (use more or less depending on your preference for sauciness). Let the mixture simmer for about 5-10 minutes, allowing the flavors to meld. You can add a bit of salt here if needed. Assemble the Dish: Once the sauce is ready, add the fried tortilla chips to the skillet. Gently toss the chips in the sauce until they are well coated. Cook for an additional 2-3 minutes until the chips start to soften but are not mushy. Serve: Transfer the chilaquiles to serving plates. Drizzle with sour cream, sprinkle with queso fresco or shredded cheese, and garnish with chopped cilantro. If you like, add some sliced avocado, sliced radishes, pickled jalapeños, or fried/poached eggs on top.
